Healthy Carrot Loaf


Ingredients:

  • 1 cup flour (I used oat flour)

  • 1/2 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg (optional)

  • 1/2 cup stevia (or sugar)

  • 1/3 cup brown sugar (I used stevia brown sugar)

  • 2 large eggs (can use flax egg to make it vegan)

  • 1/2 cup unsweetened applesauce

  • 1 teaspoon pure vanilla extract

  • 180 grams grated carrots (about 2 large or 3 medium carrots)

Instructions:

  1. Preheat oven to 350. Spray coconut oil spray onto pan (9x5-inch) and line with parchment paper.

  2. In a large bowl, mix flour, baking soda, baking powder, cinnamon and nutmeg.

  3. In another bowl, mix sugar and brown sugar until light and fluffy, about 2 minutes. Add the applesauce and vanilla extract and mix. Next, add in grated carrots. Fold in dry ingredients just until combined.

  4. Pour the batter into prepared loaf pan. Bake for 40-50 minutes or until a toothpick inserted into the center of the loaf comes out clean. Allow loaf to cool completely.
