Healthy Carrot Loaf
1 cup flour (I used oat flour)
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
1/2 cup stevia (or sugar)
1/3 cup brown sugar (I used stevia brown sugar)
2 large eggs (can use flax egg to make it vegan)
1/2 cup unsweetened applesauce
1 teaspoon pure vanilla extract
180 grams grated carrots (about 2 large or 3 medium carrots)
Preheat oven to 350. Spray coconut oil spray onto pan (9x5-inch) and line with parchment paper.
In a large bowl, mix flour, baking soda, baking powder, cinnamon and nutmeg.
In another bowl, mix sugar and brown sugar until light and fluffy, about 2 minutes. Add the applesauce and vanilla extract and mix. Next, add in grated carrots. Fold in dry ingredients just until combined.
Pour the batter into prepared loaf pan. Bake for 40-50 minutes or until a toothpick inserted into the center of the loaf comes out clean. Allow loaf to cool completely.
