A healthier take on Zucchini Bread. Feel free to add dark chocolate chips or nuts to the recipe as well!
1 large zucchini, grated
1 cup oat flour (grind up rolled oats)
2 scoops vanilla protein powder
2/3 cup applesauce
4 egg whites
3 tbsp stevia (I use Truvia)
2 tsp vanilla extract
1 tbsp cinnamon
1/4 tsp nutmeg
1 tsp baking powder
Optional: dark chocolate chips or carob chips
Pyrex dish or other baking pan
Non-stick spray (I use coconut oil spray)
1. Preheat oven to 350 degrees.
2. Combine all ingredients in a large bowl and mix well.
3. Spray Pyrex dish with coconut oil or line with Parchment paper and pour batter into the pan.
4. Bake for 30 minutes or until toothpick comes out clean.
